the first place you should visit, hands down is http://www.applevis.com
Lots of great recommendations for apps, tutorials and shorter podcasts. For longer ones blind cool tech http://www.blindcooltech.com is good. Some of them are slightly older but the information still applies.

As for screen protecters, I personally really do think that for the most part, expensive is better. I've had two screen protecters since I've had my iPhone; a 99 cent one, and a $15 one. the cheap one worked, if by work I mean that it stayed atached to the screen and protected it from dirt and scratches, but I found it made the screen less responsive. Not only did the expensive one have no negative impact on the responsiveness of the screen, but I actually liked the feel of it a lot better, especially when it comes to swiping. it's still on my screen to this day, and I have no plans of taking it off. There are also tactile screen protecters available, but personally, I've never needed one. that's not to say they aren't good, though. some people swear by them.

As for the phone itself, I can almost guarantee you that it will frustrate you to no end for a few days, especially if you've never used voiceover with a touch screen before, but it's incredible once you get used to it.

I have had my phone for two years and I still find myself in awe at times that a mainstream company has chosen to make such a popular device fully accessible. You will have lots of frustrations and confusion at first. Be prepared for it, but you will come to love the phone very shortly.
